Smoked salmon with avocado, figs and apple vinaigrette


1 serving

smoked salmon
1 handful fresh, crisp baby spinach
2 tbsp roasted walnuts
1/2 avocado
1 ripe blue fig 

APPLE VINAIGRETTE
1 clove chopped garlic
1/4 small red apple, finely chopped
1/2 tbsp vinegar of good quality, preferably sherry vinegar
1 1/2 tbsp olive oil
salt and pepper
sprinkle some french green beans on top (my favourite!)
